APRICOT ALMOND ENERGY BARS
3 cups flaked cereal (bran flakes work well)
¾ cup chopped dried apricots
¾ cup toasted slivered almonds
½ cup quick cooking oats
2 Tbs. sesame seeds
2 Tbs. margarine
1 cup sweetened condensed milk
Stir together the first six ingredients. Add the sweetened condensed milk, mix well. Pour into a greased 13"x9" pan. Bake at 325 degrees F. for 25 to 30 minutes. Cool and cut into bars. Store at room temperature in a covered container.
½ cup margarine
½ cup packed brown sugar
¼ cup white sugar
1 egg
1 tsp. vanilla
2/3 cup white or whole wheat flour
½ tsp. baking soda
1 cup rolled oats
½ cup cooked drained lentils
½ cup cooked wild rice (optional)
½ cup raisins
½ cup sunflower seeds
Cream margarine, sugars, egg and vanilla together until fluffy. Stir in flour and soda. Blend well. Stir in rolled oats, lentils, rice, raisins and sunflower seeds. Drop from a teaspoon onto greased baking sheets allowing space for spreading. Press flat with floured fork. Bake at 375 degrees F. 8-10 minutes. Carefully lift off pan. Cool completely. Makes four dozen cookies.
} CHEWY HEALTH COOKIES
¾ cup whole wheat flour
¼ cup wheat germ
¼ cup dry milk powder
¾ tsp. salt
¼ tsp. baking powder
¼ tsp. baking soda
½ cup butter or margarine
½ cup peanut butter
¾ cup honey
1 egg
1 tsp. vanilla
1 cup raisins
1 cup chopped dried apricots
¾ cup quick cooking oats
½ cup chopped walnuts or pecans
1/3 cup sunflower seeds
1/3 cup coconut
In a large mixing bowl, stir together the first six dry ingredients.
In a small mixing bowl, beat butter or margarine, peanut butter, and honey. Add egg and vanilla; beat until smooth.
By hand, stir butter mixture into dry ingredients until blended.
Stir in remaining ingredients; mix well.
Drop by large teaspoonfuls onto an ungreased cookie sheet about two inches apart.
Bake at 350 degrees F. for 12 to 15 minutes, depending on the size of the cookie, until browned.
