Watch the Biggest Loser Tonight (11/17/09) and Serve 20- Minute Low Fat Broccoli Cheese Soup

I can't wait. It's my favorite program (830/7:30c NBC) According to Brie Hearn seattlepi.com ., t onight's 90-minute episode follows the magic-filled Christmas tale Merry Madagascar , but the Biggest Loser gang have their own brand of magic in store as well. It's makeover time! Fashion expert Tim Gunn and hairstylist Tabatha Coffey swoop in to update the players' styles before they reveal their new looks to friends and family. They also draw on their new confidence to deliver speeches about their weight-loss efforts at a media event.
Since I want to eat healthy while watching the biggest loser, I am going to prepare a Low fat Broccoli Cheese Soup. (If you are on weight watchers, it is 4 points and makes 4 servings of about 1.14 cups each. Hm..think I'll make some low fat tuna sandwiches with slivered almonds and low fat mayonnaise to go with the soup.
Here is the soup recipe: (you can make it in 20 minutes.)
Low Fat Broccoli Cheese Soup (Serves 4)
- 1 (1 lb) bag of frozen broccoli floret
- 1 (14 ounce) can chicken broth or vegetable broth
- 2 tablespoons all-purpose flour
- 2-4 finely chopped shallots
- 1 tablespoon butter (or 10 servings spray butter)
- 1 cup of your favorite shredded cheddar cheese (we use Kraft Cheddar Classic Melts)
- 1 cup fat-free half-and-half
- Place broccoli and 3/4 cup water in microwave safe dish, Microwave broccoli until fork tender (about 6 min on high).
- Meanwhile in saucepan, saut shallots until clear.
- When clear, add flour to pan and stir until flour cooked Add broth and 1/2 cup of broccoli water and 1/4 of broccoli spears.
- Mash entire mixture with a potato masher.
- Bring to a rapid boil.
- Boil for about 3-5 minutes.
- Decrease heat, add rest of broccoli spears (whole), half and half and cheese.
- Stir until cheese melts.
- Season to taste with salt and pepper and enjoy.
