Christmas Smoked Cornbread Biscuit Stuffing: My Very Own Original Recipe

2 cups Onions, chopped

2 cups Celery - 2 cups chopped

4 boxes Jiffy corn bread mix (small boxes)

1 small box Bisquick

drippings from turkey - as needed


Saute two cups each of chopped onion and celery in margarine. Let Cool.

Bake four boxes jiffy cornbread mix as directed in long cake pan.

Add water to small size Bisquick, as directed. Bake in oblong cake sized pan.

When cool, began breaking up cornbread and biscuit mixtures with your hands. Press between hands into small pieces.

Add cooked celery and onions and drippings from smoked turkey. If you do not have smoked turkey, you may add canned chicken boullion or drippings from boiled turkey parts. Keep adding drippings until it is of a muffin consistancy. If you run out of drippings, you may add some water. I find that I don't need any flavorings, because of the smoked flavor, but taste for yourself and add accordingly.

Bake at 400 degrees F. in various sized pans until done. It should be moist.
