I see Betty, my friend on the extended holidays, like Christmas and Thanksgiving because she is my daughter's mother-in-law. She is always looking through recipe books and jotting down the recipes. No wonder she is such a marvelous cook. She also does canning and freezes yummy homemade dinners for unexpected guests.
One Thanksgiving, she prepared this wonderful Apple-Cranberry Casserole, which took the place of just cranberry sauce. Every one loved it. Even those who did not like cranberry or cranberry sauce just inhaled it. Hope you enjoy it. Here it is:
3 cups apples, chopped and unpeeled
2 cups whole cranberries
1/3 cup white sugar
1/3 cup brown sugar
1 stick margarine
1/4 cup brown sugar
1 cup oatmeal
1/3 cup flour
1/3 cup chopped nuts
Mix the apples, cranberries, 1/3 cup white sugar , and 1/3 cup brown sugar together and put in casserole dish.
Top with 1 stick of margarine, 1/4 cup brown sugar, 1 cup oatmeal, 1/3 cup flour and 1/3 cup chopped nuts .
Bake at 350 degrees F. for 45 minutes.
Preparation Time: 10 minutes serves: 6
